Black Bean Breakfast Stir Fry

I made this for breakfast and my non-health food loving family couldn’t get enough, they even asked me for the recipe! So, this is for you Chris:)

 

Ingredients:

1 large japanese (white) sweet potatoe, chopped

1/2 butternut squash

1-2 cups of cooked black beans, or 1 15oz can rinsed and drained

1/4 cup of baby bella mushrooms, chopped

1/4 cup of kale, chopped

2 tomatoes, chopped

1 medium onion, diced

1/2 tsp cinnamon

1/4 tsp cayenne pepper

small amount of chopped fresh basil

white pepper to taste

salt to taste

 

Lightly steam the potato and squash, and set aside.

Sautee onion (and garlic if you want to add).

Add the rest of the ingredients, except tomatoes and basil and cook until vegetables are soft and flavor has melded.

Garnish with tomatoes and fresh basil (or use cilantro).

Serve with Cashew Sour Cream.

I have read that sometypes of Black Bean are fermented soybean so choose non soy blackbean.

Hey Sis… I’m taking your suggestions and going shopping. My arthritis pain is almost unbearable and the research suggest vegan diet. Your recipes sound delicous. Hopefully the diet is easier then it sounds. I’ll let you know the results. Love and miss you, B

I’m sorry your arthritis has gotten so bad, but I hope the diet helps out! It’s supposed to be good for diabetics too so hopefully you’ll really feel the difference. Let me know if there is anything I can do to help. Love.
