Mark Engelberg’s Gluten-Free, Vegan Bread

I jumped for joy when I found this amazing bread recipe! As you know, I’ve been searching for a good bread recipe, the kind you can serve to guests, for a little over a year now. Well finally here it is! Just be sure not to undercook it, because then it will come out doughy and not very tasty.  100_4314I recommend eating fresh out of the oven with  Earth Balance soy free butter spread.

Thanks for this recipe! I’m so happy to now have a soyfree EB. I hated the soy version. I hope they will make it in sticks soon.

I tried this very same recipe after an exhaustive search right around May and then you posted about it! Then I did another exhaustive search trying to find out just who Mark Engelberg is; because friends, if he can come up with this bread he is a true miracle worker and I want more recipes!!! Any ideas?

Oh, good! I’ve been searching for a G-F vegan bread recipe. Any suggestions as to what to do if I don’t eat cane sugar? I wonder if honey or agave could work… I will give this a try soon and let you know how it went. Thanks!

PS – Is soy-free earth balance only available in the US? I havent seen it here in Canada.

Hi Emily,

I just read the comments on the original bread recipe’s site (linked at the bottom of the recipe). It seems that the sugar is essential to making the yeast rise. It might be possible to substitute part of the sugar with agave or honey, but you should leave some in for activating the yeast. It looked like lots of people wanted to cut down the sugar, but none had posted saying they were successful. If you’re succesful make sure to post back:) Good luck!

THIS BREAD IS FANTASTIC!!!

It is easy, organic ingredients in bulk at my local CoOp are cheap and it is incredible.

I am gluten, soy and egg free, hard to find much of anything bread to eat or make. I love you! lol Thanks!

What can I substitute for the potato flour? My son is sensitive to dairy, eggs, rice, potato, millet, buckwheat and all the wheats and oats…doesn’t make it pleasant but I thought I would try replacing the millet with teff and also adding amarath flour. Do you think that would work?

i have been making up to three loaves of failure day after day for almost a months. some, we suffer through and eat, some go straight to the trash.

this bread is perfect! wish i could shout it from the rooftops! it tastes like normal bread, looks like normal bread. i am thrilled!
